Default 1990 Ford Mustang GT Convertible Ideal Wheel configuration

Hello,
I am building a 1990 Ford Mustang GT Convertible. Been building Ford's for a long time, but not one of these Mustangs. This is a special car to me because It belonged to my Uncle who recently passed and wanted me to finish the car for him.
I purchased the 5 bolt conversion for the front and rear from American Muscle.

I am ready to purchase some wheels and tires for the car. I want to get the biggest practical wheel I can get front and rear.

I'm thinking 17 or 18" wheels.

I guess the information I'm looking to get some advice on is wheel width and offset. I want the tires to fit very sanitarily with no chances of rubbing.

What will fit the rear with regard to wheel width?
What rear offset is going to work the best?
What size tire would you recommend?

Same for the front:
Wheel width?
Front offset?
What size tire? (I don't care if the front and rear tires are different sizes)

I would sincerely appreciate any feedback. I used to have a much larger and better equipped shop. Now I'm just working in a small 2 car garage and need a little help. Thank you.
