any suggestions on an easy-to-apply product for the plastic trim bottom exterior panels on 2010-2012 Mustangs? something that will leave them a darker black, and protect them / make em cleaner, for longer?

I would recommend using Wolfgang Exterior Trim Sealant. Unlike a dressing that simply washes off, Wolfgang Exterior Trim Sealant forms a durable cross-linking bond to the plastic/rubber/vinyl surface, restoring the appearance and protecting it. A single application lasts up to 6 months. It is exceptionally easy to apply and if any accidentally gets on your paint, it wipes right off.

What are your thought's on applying optimum 2.0 to a brand new unmounted set of Forgestar wheels? They clear coat their wheels

I'd say go for it! Your wheels will be much easier to clean when Opti-Coat 2.0 is applied.
