Default gt vs. v6 conversion

which would be cheaper

getting a $20000 gt and paying 6 grand a year in insurance or getting a v6 and putting a more powerful than 4.6 crate v8 in it for the price of v6 insurance

in a 2000-2004 mustang

what does like a 331 stroker or a really powerful reliable engine conversion cost?
how much time do you think it would take and what is a good setup
