Whats the difference between running lean and running rich? How can you tell if your car is running either?

Start you car. let it run. If it smell like gas, you running rich. If you are running a msd, run it a little rich. Jugador is right too.

you'd always rather be rich than lean. Lean puts holes in pistons and rods through blocks.

the best way to tell is with a air fuel meter, look in summit, or put it on a dyno.
