Manual Rack
How hard is it to replace the power steering with manual. I'm hoping to swap out engines before the spring. (If I finish the new one by then) I figured it would be a perfect time to change the steering.
This was the last ford I had with Manual steering. It's not to hard to steer once you start moving. Besides my stang isn't a daily driver. It would suck as a daily driver with the suspension mods it has

Manual racks are simple to install, if you use a ford rack you'll need the iron piece that connects the rack's shaft with the steering wheel shaft (the one with 1 bolt in it).
They dont turn hard after 2 weeks you wont notice. No pump, no hoses, no leaks=good!

How much weight/belt drag can you really save by doing this? My last car didn't have power steering and it sucked for things like parallel parking or anytime you have to turn your wheel when it's not moving. This car was a basic manual 1.9L saturn that weighed next to nothing. I'd imagine that large sticky ZR tires and the extra weight of a V8 would make this even tougher.
