Torque wrench.
A beam type is accurate enough for your puposes.Craftsman is a good company to get one from.I've used them to build H-D engines and ain't pulled a thread or broke a bolt yet.

^+1 there arent too many specialty tools you will need. just get a decent torque wrench, a set of fuel line disconect tools, various types of sealants and RTV's, swivels and rachet extensionsand you should be all set. And good luck with the project ive been there and i know how much it sucks blowing head gaskets. Also if your looking to put a cam in or some new heads on theres no better time than now to do it.
