Default Stock elec fan temp change

Does anyone know if there is a way to knock the "fan on" temp down? I have a 180 thermostat and I checked the upper hose with a laser temp reader and the fan doesn't go on until something like 220 and shuts off at 205. This defeats the purpose of having a 180 thermostat when driving in the city. I'd like it to turn on at 200 and shut off at 190. I was thinking of rewiring it with an aftermarket adjustable switch but I would like to retain the factory wiring since I like the 2 speed operation (low speed for cooling and high speed when the ac is on). Thanks.
