I have e cam wiht edelbrock performer heads and 75mm mass air with 24lb injectors and 255lph pump what should my fuel pressure be at idling or WOT?

I would try 38psi +/- 2psi under WOT. Adjusting your FP on a mass air car doesn't have a huge effect. The EEC and other sensors like O2's control most of your fuel areas. Some say that the stock ones are great if working properly but I like the added adjustment as I run SD and most are rebuildable as well.

add 2 psi to stock which should be 38 if your stock reg is working fine. see how it runs, if better you can leave it at 40psi or you could try 41psi. if the car runs worse at 40 try, going to 39 or even 37-36psi

36-38 psi bc of the 24# injectors the stock psi is set for 19's

I had mine set at 38psi without vacum (WOT) and it ran rich and was slow.
I lowered it to 32psi and it runs super strong now.
