Question Quick question regarding a dyno run.

Ok, ive seen tons of dyno runs online. Usually its a car slowly building up rpms, then it seems to be pushed to its limits, however I never see shifting. So whats the standard procedure? Looks like the car is started off in a certain gear, and remains in that gear throughout the entire run. Could be wrong.

Yes, the run is in 1 gear, typically 3rd or 4th

If I recall correctly, the dyno run uses whichever gear has a 1:1 ratio (3rd, 4th, 5th). This avoids false information that gear ratios could give for a more accurate power measurement.
