Default 06 Mustang GT Starts Stuttering When Braking Randomly

So for some context, my Mustang had to get a head gasket replacement a few months ago. Took her to a local shop and after having it for a couple months, finally got it back. Ever since I’ve gotten it back (never happened before) after the engine warms up and I’ve driven for a little while, sometimes when I accelerate a little and brake the engine will start like stuttering. (Happens in drive and reverse) Then when I put it in park and then turn it off. I can turn her right back on and she’s perfectly fine, although usually once its happened once it’ll happen again more readily. What seems to be the issue is the oil pressure is dropping all the way to zero when this happens. Today however I didn’t have to turn it off for it stop. Engine started stuttering (but not as bad as usual), seen the oil pressure gauge drop to zero, but then it went back up by itself and was fine, until it started again a little later at a stop sign but I hit the gas to make it stop. She’s been at multiple mechanics who haven’t been able to tell me much. One said it might be the oil pressure sensor, but they couldn’t get the issue to happen to fully diagnose. Other said I needed a new engine. Not much of a mechanic myself, so was hoping someone might be able to steer me in the right direction. Thanks!
