What would be the easiest way to change the transmission fluid and filter?

pay some one is the easiest way.

theres two ways one you need a very expensive piece of equipment. to basicaly pump in new clean fluid as the old stuff is coming out.

the other is to drop the pan and drain all the fluid and replace the filter.

If I drop the pan and remove the filter do you still need the pump to put new fluid in?

No..you can use the ***** pump that was included with all v6 stangs. LOL...jk.
