Do I lose a dyno tune if I return car to stock tune?
If I buy an intake/tuner and then have a local dyno shop tune the car, can I return the stock tune (to take it into the dealership) and then still bring back the dyno tune?
In other words, are they able to load the tune into your tuner, so you can add it or remove it as easily as you can with the canned tunes?

Yes if you buy a device for flashing your vehicles computer, like XcalII or Predator the person tuning your vehicle on a dyno will upload that program into your flashing device.
Now, if you want your car back to stock you download the “dyno” tune from you vehicle and then upload the stock tune. Once your ready to go back to the “dyno” tune you download your stock tune and upload your “dyno” tune to the vehicle’s computer.
