Any of these three cars you listed can be built to hit high 10's. The probably better choices would be the GT500 or Temi because those engines have true forged con-rods and better pistons. The '11 GT Coyote does not have forged anything in it.
Well, they advertised forged conrods in the Coyote, but those are fake forged, meaning sinter-forged, which are not suitable to taking supercharger/turbocharger boosts the GT500 and Termi can take.
