I have a 03 gt and all i have is exhaust and shaker hood and i raced two 06 gt one from a roll and killed it
and the other one we were dead even to 80 and we all have sticks does anyone know how i kept up

Assuming the 05+ is bone stock, you're looking a moderate bolt ons and 4.10s and you might stand a snowball's chance in hell. When my Cobra was bone stock (except for "the fix") I would put 2 or 3 cars on them from 40 to 100.
