I ran my 06GT vert to 11.49 @ 121 (mostly ran sub 11s for a couple yrs), now it was a newer ride with more modern factory safety equipment.... but no roll bar

I think you'd be fine

Is there a 1/8 mile track around? Due to lesser trap speeds they're usually less stringent on safety regulations. It's the only place I can take my convertible; one 1/4 mile track near me requires a bar if 13.99 or faster (last I checked anyway), and there's another track that requires a 4 point bar regardless of et or trap. The 1/8 track, all they really care about is that your car is in good repair, no leaks etc.

Try it out and see, you should be around mid 13's with what you've got. Why not just get a roll bar, I think they actually look good in fox body convertables

Honestly, I wouldn't drive a vert without a roll bar, even on a street.

I've never liked driving without a roll bar either. Especially on the street.

They make the back seat pretty much useless for passengers though. Don't want a kid smashing their skull into the bar, or coming forward and smashing their teeth into the cross bar.
