Default 98 weird heating problem

Back in April, I changed out my stock thermostat to a 180deg one (someone suggested that I change to a cooler one to get rid of my inconsistant pinging problem). The system was properly burped and had never ever overheated. I even pushed the cobra up a hill doing 90 in 85+ degree heat and didn't have a problem.

However, when I took it to do a couple of laps around a track (not going faster than 30mph). As I was exiting the track, I noticed the gage being 3/4 of the way (it has always rested on the "r" where it says "normal" on the gage).

There was no coolant leaks and the coolant reservoir was filled to where it should be. I let the car cool down for about two hours and drove it 80-90 mph and didn't have a problem.

Has this situation ever happened to anyone else? Anyone have any suggestions?
