Default Overheating Problem

I was driving about 2 days ago and the temp guage was showing the needle on the "A" in "Normal" when it usually rest on the "R" during the day. We replaced my thermostat last night from a 195 degree to a 160 degree thermostat and I drove around to see if it would get better. I let it idle for about 5 min and the needle went to the "A" again. Then, when I started driving the needle went back to the "N" or a little before the "N". If it idled, the needle would start heading more towards the "A".

If it helps, I also noticed at the same time that my A/C would blow normal if not a little warm air at idle when my A/C was on the coldest temp full blast. When I would accelerate the A/C would start blowing cold air again. But, if I stopped and let the car idle, the A/C would not blow cold air.

Anyone have any idea what may be wrong?
