do i REALLY have to get two new o2 sensors and MAI eliminators if i remove my cats?

No...but you will need 2 MIL eliminators.

Keep the upstream set on there. The MIL eliminators connect to the harnesses for the 2 downstream ones you will be getting rid of.

Yes without them your check engine light will stay on.
