Default Malfunctioning engine temp gauge?

In my 1995 v6, the temp gauge as been reading way off. Even if I drive the car for 15-20mins it still reads cold, then every once in awhile the gauge will jump into the red zone. As soon as I turn the car off, it goes right back to reading cold again. I just topped off the coolant fluids last night and it seemed alright, but this morning it started doing it again. Would this be the enduing unit? Or what?

Is it really getting that hot?
When is it jumping to the red? While sitting still? While driving?

No, it doesn't get nearly that hot at all. And it's while i'm moving. Like, I was going home, the temp gauge jumped up so I pulled off and shut it off just to be safe. As soon as I restarted, the temp dropped right back down to cold. Not this was only like a 45 second break.

Plus I forgot to add that my heat wont work if I let my foot off the gas. If I have it pressed I have heat. Like, wtf? lol

I want to say something is wrong with your thermostat but this is a very weird problem. I know my car does normally take around 10 mins to heat up and I just put a new thermostat in it.

When you topped off your coolant did you have the heater on full heat and full fan? Sounds like you have an air bubble in your heater core. Make sure heat is on full blast when filling coolant to purge any bubbles.

Did that exactly. I usually always keep it on full bast as it is since recently it's been like 20 degrees in the morning. And I next to never remember to shut it off, lol.

My guess is a bad thermostat that is either stuck open or closed. I would replace that it's only about $8. Than with the old thermostat boil some water and put it in it to see if it was actually working or not

Im also guessing air bubble. Heat not working is a sign of low coolant usually or a bubble. The added pressure from gas pedal down it allowing the core to get enough to work. A bad thermo could also cause it.
