Engine overheats, AC gets hot
2004 Manual V6... just started doing this yesterday::
While idling, AC gives very hot air, temp gauge increases towards the red zone. If I drive the vehicle, the gauge goes back to the center and the AC gets cold again. Can't tell if the fan comes on or not, so I'm wondering if the fan is bad, the fan relay is bad, or something else?

Fan will come on anytime the AC is on. Park the and let it idle car, or run it in neutral, turn your AC on. If the fan doesn't turn on. that's one problem.
Other problem if your fan does come on but the car still exhibits the behavior, how's the coolant look? An overheating car will negate the A/C from working since the condenser sits right on top of the radiator. if your radiator is running too hot, that reduces eliminates the condensers functionality.
