Personally I go under the hood with a wet rag and wipe down everything by hand. No reason to risk spraying anything you shouldn't. And I get to know my engine a lot better this way.
I do the same thing. But then again I've been doing that since day one of owning it and it's been easy to keep up on it. However this will be it's first winter so that'll change things, I'll probably be hosing it down throughout winter vs. by hand. I've heard to cover the air filter and electrical parts like the fuse box. Also not to use high pressure spray.

What about the hood insulation? Is it ok to get that wet by spraying it or will it ruin it over time by doing that?

I've always heard to cover the alternator and intake with a plastic bag and then you can pretty much do whatever you want as far as hosing it down.
