Temp Sending Unit question

Temp Sending Unit question
I have been advised that the 2007 GT doesn't have a coolant temp sending unit. Rather these cars take their temps off of the cylinder head. Would this explain why the temp indicated would be higher than coolant temps?
I have a 170* thermostat. It doesn't seem to open until the indicated temps hit 192* Would the actual cylinder head temp be 20* or so higher?
Where does the system take these cylinder head temp readings from?
Anyone have thoughts on this?
I have been told that normal head temps on these cars is 200-210* and that the low speed fan doesn't turn on until just slightly higher and the high speed setting doesn't engage until 220-230*

CHT is taken from the middle of the passenger side head. The sensor is in the valley under the intake. The CHT and indicated ECT won't be that far apart, I think your t-stat isn't functioning correctly. The fan temps can be changed with a handheld tuner.
