Default caliper clearance

i just ordered the 18x9" deep dish chrome bullitts for my 05 gt. the quality is great, they look amazing......but they only clear my brake calipers by a couple millimeters at best. is this how they fit on all??? is it safe??? do i need spacers?? the guys at the shop said as long as it clears, there's no problem, but i'm a bit skeptical....

with 14's and 18x9 same here. about 3mm clearance. i'm kinda worried about a rock or something getting stuck in between... what happens if it does anyway?

It's normal....no need to worry. If you look at a V6 with stock wheels, you'll see clearance is probably even closer than what your new wheels are. My wife has a v6 and looking at the wheels, you would be lucky to slide a fingernail thickness between the wheel and the caliper.
