Which weight Mobil 1 goes in the 2007 V6? I've decided to use Mobil 1 since I've heard good things and it is readily available. Do you have any oil filter recommendations please? Thanks!

5W-30. The stock Motorcraft filter is good quality, certainly fine if you change the oil at Ford's recommended interval of 5000 miles or six months, whichever comes first. I don't have a recommendation if you are going for oil change intervals beyond what Ford says.

I believe the Owners Manual states 5W30 for the V6. That is regardless of what brand. The OM has all KINDS of useful info in it. Really. I'm not kidding...
The Motorcraft filter is highly rated and a good buy for the $$. I also like using the M1 filter with the M1 oil in my SUV.

+1 on the Motorcraft filter. I used to use Fram's until I found out what POS's they really are in comparison to the Motorcraft ones, and the prices are very similar, so go for the Ford brand.
I've mainly used 5w-30 Mobil one, full synthetic. In the 5-gallon jug, sometimes it'll have 'SUV' on there, but it's 5w-30.

Also, the motorcraft filter is actually a rebranded puroilator pure1 filter. sometimes you can get those a few bucks cheaper than the motorcraft. I use castro syntech 5w-30 full synthetic in mine. Though I'm not sure who makes motorcraft oil. Anyone know?
P.S. Frams do SUCK hard.
