Tuner and emmissions question

Tuner and emmissions question
I just bought a 96 GT convertible 5 spd. The engine light was on with codes P0161, P0156, P0141, and P0136. All O2 sensor codes. Car has long tube headers and missing the rear cats so I'm sure that's why I got those codes. Also code P1000 which I've read means the car needs to be driven and it should clear. Last code is P1443 which I understand to be Vapor canister solenoid and/or flow sensor.
I have an XCAL2 but I need the name of a good tuner who can turn the rear O2 sensors off and provide a good mail order performance tune.
Since emissions are not important for my location, can I remove the vapor canister and related equipment or is this something I need to fix and keep? Also, is there any other emissions stuff on these cars that can be removed to improve driveablity but not hinder it?
