Default P0172 and P0175 Codes

Hey everyone, I got a 2000 Mustang GT.
I bought it off a guy who said it had compression issues. Turns out cylinder 2 rod was shattered. Long story short, I ended up swapping for a crate engine.

Here is my problem now, it runs rich. It first started on one side (p0172), I went one by one swapping injectors. The code jumped to bank 1 (p0175), and I replaced that injector suspecting it of leaking. Now the rich code pops on both banks (P0172+P0175).
So far I have cleaned the MAF, double checked all the electrical connections and grounds, checked O2 sensors, and checked for vacuum leaks (even though it shouldn't cause this code).

I am going to check the fuel pressure but I doubt its the problem too. What else can be causing these issues.
My OBD app shows that my trims are almost maxed out on the negatives.
