I heel toe all the time. Double clutching is used in racing to this day beacuse they use straight gears in the transmissions with no syncros most of the time. They don't even need to use the clutch if they don't want to. They use the clutch to feed power to the wheels because to motor will cause alot of breaking in a corner if they don't use the clutch.

Yes DCing is very important, but in a street car not so much. It is a lot of work to try and save a little wear and tear on the syncros, because that is what they are designed to do in the first place.
