Tranny would prolly act up as well as it is electronic...

I'm pretty sure my T5 is as simple as it gets. Nothing is electrical on it that wasn't back in the 80's (reverse lights) t5's with the exception of my speedo.

what are the problems you are having with the EFI as it stands?
what you are planning on doing is going to cost you WAYYYYY more than it would to fix whats wrong now...
if you had a foxbody the price would be much lower, but having a 94 makes almost everything in the car useless, if you want to ditch the computer.
tranny, gauges, motor, fuel pump, the list goes on.
brake system must also be re-plumbed because of the electronic ABS.

you might wanna consider putting a little time into chasing your problem before you leap into this huge project.

find your self a good technician to work on the car.......carb systems are less hasslemost of the timebut unlike a efi system which in a sense tunes it's self to a certain degree with respect to ignition timing and a/f mixture...you are that tuner when it comes to carbs... you must know when you have hesitations related to accelerator position and or stumbles what area of the carb to tune .....what to set base timing to and how to tune the advance rate and curve...all in all you need to learn the parts of a system/carb ..understand their function and how much to change that area to cure the problem.......once you understand the parts and theroy of operation......tuning a carb is not all that difficult ....more so time consuming...as you make a change drive it ...evaluate the effect of change and read the plugs and so forth.........

I did the it with a 85 mercury cougar. I did it the most ghetto way possible. I just cut the harness in the engine bay. I do have a speedo and fuel gauge that still work. I am going threw and replacing the other ones right now. Also if you have an AOD, there is a few other things to do. I am messing with them right now.
