Yeah I do want to gut it all the way, just because I want the end result to be (or appear to be) a new 93' LX mustang. I will do crazy mods on the interior down the line and keep up with some of the stuff I have seen done. (newer model seats, custom consoles).
Then the engine, I want to be a monster. It isn't going to be a daily driver, but I do want it to be strret legal. Which is very liberal here. (No emisions testing, they don't mess with cars with hot rod regestration)
But I want it to appear as stock as possible.

+1 on updating the seats but you have to look out for the weak floorpan where the seats bolt in they rust and break through, esp yours since it has been in a flood. as for the stock look but monster motor id go with 347 s/c or turbo(s) and maybe an 1.5 - 3" cowl hood if need be for clearance but other than that id leave it they way it is.

I'm going to keep it for now. I like the way it looks, I just don't like how water can go down it and end up on top the distributor.
I can't honestly say what I am going to do with it now.
Also I would do some fab work to support the new seats, I just never liked the stock ones.
