Default speed density or MAF computer?

im converting my 2.3L to a 5.0L, now ive been told that running a speed density computer with a mass air flow sensor will make the engine run with more power. but then ive been told by the local mustang shop that their idiots and that itl run okay, but not at full power. who's right? any data to back this up?

on a speed density car it would do nothing bc all a MAF is a aluminum tube with a sensor on the top. If you converted then it would make a differnece
