this is my first winter storing a car, so please ignore any "noobness" this question contains.

So do you suggest just letting it sit the whole winter without starting it, or start it more often than every couple of weeeks?

Let it sit all winter. Unless you have the opportunity to get it out of the garage for a good long drive.
