air filter/computer problem???

Exclamation air filter/computer problem???

I have a 1995 Mustang GT that has a 393 stroker efi motor & T-5 trans in it.
it has a K&N cone filter on it which sits in the fender,fox body trottle body conversion kit,p&p 75mm TB,p&p TF 351 upper & lower intake,TF stage1 cam, p&p E7 heads with 1.9 & 1.6 valves & 1.7 Crane rr's, o/r x-pipe & Flowmaster 40's. E7's yeah, I already know their too small but thats what it has. a couple of years ago it dyno'd at 310hp & 383tq to the wheels. I think the ###'s are low due to the heads &cam.
I have owned it for about a month now & I do not think that it runs a strong as it should ,so tonight I decided to see what it would run like without the air filter on it. I seperated the air tube in between the filter & the Mass air . it kept stalling on me,& smelled like it was getting way to much gas, I revved it a couple of times & it did ok but would idle very roughly then stall. I hooked the filter back up & it idled & ran as normal.
should I disconnect the battery for 20 min & try it again with no filter.I'm thinking that I may have a clogged filter. I haven't pulled the filter out totally & looked at it as the mosquitos were about to carry me away.
has anyone had any problems like this. I don't think it should have a problem running with no filter.
could the computer have slowly adjusted to the dirty filter??
sorry for the long post but I wanted to get enough info & details on the problem. any help or suggestions would be greatly appreciated.
