For passing/hooning, I've used these few rules for hitting that "sweet spot" in the powerband:
If you're going 65-80 mph, use 4th
If you're going 45-65 mph, use 3rd
Those speed ranges tend to make the most out of the gear - this is with 3.73 rear, btw.

I also discovered... that if your going 40mph, drop into second, and make a 90 degree turn..you can scare your passenger

With my manual and 3.55's, I'll often downshift from 5th to 3rd from 70 MPH. That puts me at 4100 RPM to start and then to my redline at 6500 RPM by 110 MPH. Fromthere, redline in 4th is at 145 MPH. After that, there's little left in 5th and drag just eats the rest.
True. At somewhere close to 4K RPM but still under 4K (maybe 3750 RPM?) the Coyote really takes off running. Once at around that RPM, the tach climbs like crazy all the way to redline
