Biggest problem? The 10 billion man hours it takes to complete the project. That is what is holding me back.

Let me list the problems.
1. dealing with vendors
2. dealing with shippers
3. figuring out what will work and what won't
4. dealing with my girl friend complaining about the hours I spend in the gargage
5. the hours
6. the cost!!!
7. getting burned out

I'm sure there are about 50 things I forgot.

Doesn't sound to me like anyone here has done a home resto job. To be specific and answer your question.
OK John, what did you do? I know you are very knowledgable, but not giving any advice either. As far as what I did......I replaced all the interior, prepped and painted the trunk, added numerous updated parts to the engine compartment to include an overflow reservoir, 4 row rad, 6 blade fan, shroud, new electronic VR and a new alternator. Stripped the engine bay and refurbished it with new correct 65 engine bay paint, replaced the rear wiring harness, new brake shoes, rebuilt carb, added Pertronix ignition, replaced the E brake handle and cable. Things I had done include completely stripping the body of the old paint, welding in new panels where rust existed, and making the aircon go from R-12 to 134A. I am putting in a new radio tomorrow.
I am not a body man. I have tried it in the past and realize I don't have either the skills or the patience to make it look great. Yes, I can weld and grind and paint. But, my work is not anything outstanding for a final appearance. So, I choose which things I can fix and make work and look good, and pay for the pros to do those things I don't do well.

One tip, ya can't drive them and retore them at the same time. A lot of people make that mistake. If it is your daily driver it will never be restored.

Dooh! I got Soaring on his sop box! That is always a good thing! I will say this, restoration is a very loosely used term. It is like the word custom. It is used so much it has lost its meaning. A restoration should mean to bring the car back to new or better than new condition. It largely depends on the car you start with but with these old stang you very rarely find any nice survivors. So a restoration will usually mean ground up, every nut and bolt. What restoration has come to mean, after looking at many cars that were "restored" is, make is run good and look good and call it done. To me that is not a restoration. I gues I would be more helpful on this if I weren't in the burn out stage on my project.
