I'm quite sure you'd mnage the wiring yourself. there's loads of wiring diagrams available. both schematic (spaghetti) and diagrams as to where the cables should go.
There really is not much electronics in those cars.

Sounds like a great find, post some pictures when you get them. I am from North Houston so you are not "that far" away.
The wiring is really not a big deal on these cars and is very straight forward really. I have replaced several wire harnesses in my '66 Coupe and when you buy the new harness it is more often than not readily apparent where the wires go....of course I had the benefit of being able to take the old one out and making note of where it goes. If it were me....I wouldn't pay the sky high labor rates these shops want. Buy the Ford Electrical shop manual or ask lots of questions and we can walk you through it. When I purchased my '66 only one headlight worked if on high beam, a tail light was out, the reverse lights didn't work, the horns didn't work, etc, etc. I have slowly figured it out and it wasn't that difficult. You just pick a piece at a time to focus on such as headlight harness then tail light harness, etc. My guess is many who have owned a classic for a while can tell you where some of the wire harnesses go in their sleep....I know I can on a few of them.
If all else fails we could always take pictures to show you were the wires are supposed to go and send you the pictures.

Congrats Steve, I was born and raised in Dallas and lived in Plano, TX, Austin and San Antonio. Sounds like you got a really great deal especially with factory A/C. My car has no rust as well but it had issues that I'm still working with. Almost done though, going with an aftermarket wiring harness to solve all my electrical issues and then it will be ready for the road.
Still needs paint and a few things but I'll at least be able to drive it.
