A stripped down 65 with an I6 weighs 2,600lbs. Most people's classics are somewhere between 3,000 and 3,500. Which is still pretty light for a steel construction car. Once you start adding in beefier transmissions, beefier suspension, chassis reinforcement, electronics....it all starts to add up. It's quite easy to add an extra 300lbs give/take without realizing it.

Gearing is a big deal too. I have seen an almost stock 2000 gt with only cat backs and k&n drop in 4:56 gears vs his 3:23 originals and go from 14.50's @ 99mph too 13.6 @ 103mph. Can't just judge car by the ET time.
