My TA did this. I'm not sure where the sensor is on the Mustangs, mine was on the radiator itself and was really cruddy. Trying taking it off and cleaning it really good then put it back on. If the light still doesn't go off, either something is really wrong of you just have a bad sensor.

100th, is the coolant sensor below the radiator cap?

its at the bottum of the overflow tank, so when its empty the light goes on...its not overheating, so most likely thats the case

even with coolant in the tank, the switch can be hung up making the light stay on. mine did this once when the float in the overflow tank got gummed up with dirt and couldn't move up on the rod inside the contraption that sticks down in the tank that holds the switch that works the light. you have to take it off and wash it off real good while moving it back and forth with your fingers on the slide rod so it can move freely and then the damn light will go out. you might also need to pull the tank loose and dump it out and clean it too if it is really dirty on the inside also.
