I don't know about the newer Stangs, but my '88 required premium octane fuel from the beginning and it said so in the owner's manual. And once I installed a Hypertech chip on the ECU, I had to keep using 93 octane to make sure it didn't knock under a load. My '88 didn't come with a built in knock sensor either like the newer cars do. Now that it's a race only vehicle, I have bumped the timing up and use 104 octane unleaded Sunoco gas from the track in the tank. Damn stuff costs $3.99 a gallon, but it is worth it in my opinion as it lets me run the engine right on the verge of detonation without it knocking at all.
I would say that you should try running the minimum octane recommended in the owner's manual first and if that causes a problem, then move up to the next higher octane level or adjust the tune-up so it runs correctly on the lower octane.

i worked for a sunoco gas station for a while and there was full serve there. you should of seen all the high performance cars there trying to save money and put 87 in it. like this lady with a newer model MB SL 500. puts regular in it. for my 92 lx for says to put 87 in it so thats what i put in it. even with my 2000 gt i put regular in it. one time i needed gas so bad in my 2000 and they were out of regualar so i was forced to put ultra in it which is 94 octane and it ran like crap and it killed my gas milelage.
