When someone is talking about stage one or stage two heads, what are they refearing to? I mean what is the diference in the stages?

Usually different levels of portwork, as it how much cfm of air the heads flow.

 

in addition to porting and polishing work, depending on the company it can also refer to valve sizes, springs, keepers and such that go into making the difference between a stock head and a full bore race prepped head with larger valves and springs etc. to match.
naturally the cost goes up in stages too!!! LOL
