Inside the thermo is a chamber filled w/ a wax. Its on the opposite side of the spring. When the engine gets warm the wax melts, becoming a liquid. Since liquid does not compress the wax pushes against the little rod on the one end (its connected to the other side) which pushes the side with the spring open and the thermo allows coolant to pass thru. When the engine gets cold the wax becomes hard again and the thermo closes back up. The spring is there to pull the thermo closed. Without it the thermo would hang open.
Stick a thermo in a boiling pot of water with a thermomoeter and at about 180 degrees it should start to open. Made for a nice science project.
