Default What to do with wiring harness and fuel pump?

I am getting a 89 GT that comes with a older built 302 and am keeping the carb. setup that is coming with it.

My question is:

1. What do I need to do to get rid of the wiring harness for injection and all? can I just cut it and keep the wires for the temp/oil sending units and for alt/starter?

2. What to do about fuel pump? regulator or put in a mechanical pump?

Looking for some help asap. thanks guys..
