Help! 2.3L wont reach operating temperature

Just drove car about 40 miles. Had no issues but the gauge stayed around 150-170. Im gonna try to attatch a pic of where it got when I made it home. I believe the reset fixed the issue. So far so good

Thats good to hear.Foxbody gauges are not super accurate anyway,so from what Im seeing on your gauge,that appears to be a good temp reading for the conditions the engine was running in.During summer time with a 180° tstat in place,my 91 LX 5.0 temp gauge needle hovers around the same exact mark where your needle is sitting on your gauge.2.3's normally run a little bit cooler than 5.0's too,so your reading seems pretty normal.
Keep your grounds in good condition too.The secondary ground,located between the engine and firewall,being loose/corroded/ broken/disconnected will also affect your readings too because its the ground for the interior/exterior lights/ac clutch/alternator & the gauges.If the secondary ground has any of the above conditions present,turning any of the accessories on will cause your temp gauge to increase as each new accessory is turned on.So if your car is running & the coolant temp gauge shows a reading of 150° then you turn the blower motor on & the temp gauge reading increases by a few degrees then you turn the headlights on and the gauge once again increases by a few degrees so that its now reading 165°,this is an indication that the secondary ground has one of the above conditions present & it may be a contributing factor for a inaccurate temp gauge reading.If you try this the next time you take the car for a drive & your readings stay the same,I'd say you're good to go.

I gave that a try and saw no change in the gauge. Seems to be raising normally. But seems like the no power issue I had in the beginning is still there. Only when I drive it for more than 20-30 minutes. It acts like it won't take throttle. I can't get it to go over 1.5 rpm. If I put pedal halfway or to the floor it sounds like it's trying to backfire. When it does that. The canister between the throttle body and air filter starts bucking. I unplugged MAF sensor and got no change. And so far. With the MAF sensor unplugged I have got some throttle hesitation but it hasnt been so bad.

Originally.. The car would be driving fine. Then all of a sudden the rpm drops and it wont take pedal. Almost acts like a limp mode. That's what got me looking at the temperature because I was told that a thermostat would cause this issue. And when I took outlet off.. Thermostat was in 4 pieces. But now that my temperature issue is fixed. I seem to still have the same issue
