He's saying that the 295's aren't going to give you the same 27 height as the stock tires do. An easy way to calculate this is to grab a calculator.
295 / 25.4 = A big *** number, but round it off to about 11.61. That's the conversion for your tire width.
Now take that 11.61 x .40 = 4.644. That's your sidewall. So it's 4.6".
Now take your sidewall, times it by 2... Then add the size of your wheel. 4.644 x 2 + 18 = 27.288 Tire height. I think the stock tires are at 27, so that's not awful bad. You just want your front and back tires to match up, and people tend to get them as close to the stock height as possible so you don't have to alter your speedo. Also, you might want to get the sidewalls to match up a little bit too... That way it's uniform. So the reason why he said the 285 and not the 295 is because they are a better matchup with the 255s.
