I Currently have the 50th anniversary Edition Mustang in Wimbledon White and Love it!! But recently I've been considering the idea of replacing with the Shelby GT350.

Is it worth it? Should I hold on to the 50yr anniversary? Any opinions?

Your Mustang would have to be in mint condition, low miles, museum quality and kept for years to be worth anything IMO. Meantime, a GT350 would be a blast to own and drive.

You should find one and take a test drive. On the top end it should be quicker than your car but for scootin around town, your car may have more grunt (torque).
