when i installed those bbk long tubes it made a huge difference. before the stang sounded OK but now it sounds exactly as before except much louder (o/r h-pipe mind you) its not the quality of sound that changes, just the intensity.
The one thing i have noticed to reduce the decibel level of your exhaust was the catalytic convertors, but you dont even have those. Im pretty sure your headers will make your car somewhat louder, but not by alot. The loudest offroad exhaust setups ive heard have come from cars will larger engines, like a 347 stroker.
i just got my shorty headers on about a week ago, and with my set up ( o/r x pipe + single chamber flows ) i didnt notice much of a difference sound wise
