I technically think double clutching is using the clutch one time to shift two gears, as big truck drivers do. I'm not 100% sure though. I could look it up...but the Masters is on.

I tell everyone I double clutch my proshifted tranny, simply b/c it makes it a WHOLE lot smoother going into gears. I do have to revmatch my downshifts though, or it won't go into gear.

In a proshifted car, like mine and JD's, it makes normal day to day shifting a lot easier on you. The car won't shake as violently as it will by just pulling it in gear w/o being wide open throttle. I have no idea why anyone else would double clutch.
