Widest tire available for the 17" '05 Bullits?
I performed a search and couldn't come up with the info I was really looking for...
I have a set of the 17" OEM 2005 Bullit wheels, painted:
And I wanna throw a set of drag radials on the backs, now that summer has come around. (Colorado Winters SUCK). But anyways... here's my question... would a tire as wide as say a 275/285, probably a 40 or 45 series have any problems fitting on the stock rim, and would I run into any clearance issues with rubbing, etc on about a ~1.25 dropped rear end?

You are correct... they are 17x8's.... FUGGGG!!!!!

I'm guessing you won't want to go over about 255 width on the 17x8" wheels.
Honestly I'd just stay with what you have until you can replace the rear wheels. Americanmuscle.com has a good selection so you might wanna take a look over there.

255's are about as wide as I'd safely go on the stock 18 x 8.5's. Not positive about the 17 x 8's.

I've seen guys at the track mount 275 wide Mickey Thompson DR's on the stock Bullit, but
they seem a bit cupped onto such a narrow rim. You can run 275/50R17 M&H Racemaster
DR's on the stock Bullitts, as the M&H's run a bit narrow compared to the MT's. This tire is
also 28" in diameter, compared to the 27" dia. stock 17" Pirelli.

I've heard drags are a bad idea to run as a street use tire. Even if you don't have issues with the rain they are expensive tires and the best part of the tread will get worn off real quick.
