I have Eagle F1 GS and don't have any problems with them in cold weather. Do tires not grip as well when it's cold yes, but to the point that you have to change them to drive the car I don't think so. Only way I could see having to do that is if it was your DD and you had to drive through a Michigan style winter or something.
FWIW, Toyo R888's at 140 treadwear are legitimately daily-useable, albeit with care, as opposed to barely legally OK as in the case of "R-compounds". This tire is becoming one of the "tires of choice" among members of a different forum for street-driven cars having strong all-around performance (and some pretty fancy build budgets).

It is all in your head. The only reason you change things in your tune when you get different size tires is for your speedo to be set correctly.
If you don't change your tune, nothing except for your speedo is going to be off. Your car won't be any faster/slower if you don't change tire size in your tune.

I'm amazed you didn't feel the difference between the 20's and 17's with stock tires! I used to chirp 3rd "at will" with my car stock and the 17's. now with 20's it's a task. MUCH better handling with the 20's/35 series though.
The rim/tire may not be lighter. The 17'' stockers are pretty heavy and you have the addtl. tire weight from the 255'55's.
