I don't know the size at which they rub. That has a lot to do with the off set I think. 255 is the max for 8". A lot of people with the stock GT 17x8" run NITTO 555 255/50-17. So in short a 255 is the largest and has been done a lot around here. Again NITTO's site in the link I provided concurs with that.

They don't have a 255/35/18 that fits an 8'' rim only an 8.5'' rim at the minnimum. Would a 245/40/18 be good?

my mistake, look for a 255/45-18. That fits an 8"

I don't want the front tire to be bigger than the back one, would a 245/40/18 and a 275/40/18 be a good combo that works?

yes I don't know that you're going to see the difference in the side wall from 45 to 40 but its your call
