With the 4.0 and even with a few bolt-ons, you don't have a lot of power to worry about hooking up so your choices for tires are a bit more. Just be sure that you don't get a summer tire which will turn into a rock in your cold weather.
A lot of guys like Nitto's but I don't have any personal experience with them. I suggest using sites like tirerack.com for their tire ratings to begin your research. Considering your location, a good all-season should suffice but be aware that all season tires suck in snow and the Stang's light weight over the rear end causes the Stang to handle like garbage in slick weather compared to other RWD vehicles.

If you really do intend on driving it thru the winter where you are, I'd recommend a set of dedicated snow tires and about 150# of sand in the trunk. A cheap set of takeoff wheels would make the swap a simple task each winter. The Stang is NOT a good vehicle in the snow, although the 4.0L won't get you into QUITE as much trouble as the 4.6 and 5.0 will.
